Coconut Chess Pie

 

You can double your enjoyment pleasure with this crustless Coconut Chess Pie, because it makes 2 pies.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1/2 cup flour
  • 1-1/2 tablespoons baking powder
  • 4 eggs
  • 2 cups sugar
  • 2 cups milk
  • 1/2 cup butter, melted and cooled
  • 1 teaspoon vanilla
  • 2 cups flaked coconut

Preparation:

Preheat oven to 350 degrees F. Lightly grease 2 - 8-inch pie pans. In a small bowl, whisk together flour and baking powder. Set aside. Beat eggs and sugar until fluffy. Add milk and mix. Mix in melted butter and vanilla. Slowly add flour mixture. Combine completely. Hand stir in coconut. Pour into prepared pans. Bake Coconut Chess Pies for 30 minutes.

Makes 2 - 8-inch Coconut Chess Pies.
